The video recently released, showing ultimate acts of cruelty against dairy cows at Conklin Dairy, has broken my heart. I am at a loss for words, and I pray that the animals involved in this abusive environment, are rescued soon!! The fact that the law protects the rights of these dangerous criminals, over these innocent animals blows my mind! Please voice your concern for cows at Conklin Dairy & support Farm Sanctuary’s efforts to save them!

It is such a shame that such a large number of CHILDREN are taking prescription medication for Type 2 Diabetes. Most of you know that Type 2 Diabetes is brought on by lifestyle. So poor diet and lack of exercise is leading to this completely PREVENTABLE disease. 😦

I wish that more parents understood the benefits of a well planned, plant based diet for their children. A Vegan diet  can save lives, yet so few doctors will recommend it to their patients. Drugs, drugs, drugs….. is this really the answer?

And by the way, well balanced plant based diets have not only been proven to PREVENT Type 2 Diabetes, but also to REVERSE Type 2 Diabetes!

Super Easy & Yummy Chocolate Chip Cookies

What is one dessert that parents & kids both LOVE?? Homemade chocolate chip cookies!!! The great thing about this recipe is, they are as easy to make as they are delicious!

“Chocolate Chip Cookies Like They Should Be” created by “tinymuffinflower”  won “Sweetest Treat” in the VegWeb recipe showdown!!! Featured in the June 2010 issue of VEG NEWS magazine.

Ingredients:

3/4 cup sugar

3/4 cup brown sugar

1 cup non-hydrongenated margarine

1 tsp vanilla

1/3 cup applesauce

2 1/4 cups flour

1 tsp baking soda

1 tsp salt

1 1/2 cups semi sweet chocolate chips

1.Preheat oven to 375 degrees. In a large bowl, combine sugars, margarine, vanilla and applesauce. Add flour, baking soda, and salt, stirring until dough begins to stiffin. Add chocolate chips.

2. Onto a baking sheet, drop by rounded teaspoonfuls. Bake for 10-15 minutes, or until light brown.

I love preparing a healthy Vegan lunch for my son each day, but sometimes If I’m in a hurry, or low on groceries, I need him to buy lunch at school. Unfortunately the only Vegan option they offer is PB&J. I guess I should be happy that they at least have something for him, but c’mon, food is life, and a kid can’t live on just PB&J!! Even the salad option is “Chef Salad”!!!

I honestly have trouble understanding, how any good parent allows their child to eat “brunch for lunch” (greasy sausage & french toast sticks), mystery meat, low grade beef tacos and the other garbage served in cafeterias across the country!!

It’s not much of a surprise that 1/3 of the kids in America are considered overweight, and setting themselves up for a life with chronic disease!

As a Vegan, fitness loving mom, I wish I could reach out and help every child struggling with food issues! No child should be taunted for their weight! 😦

The Physicians Committee For Responsible Medicine, states that children raised on a plant based diet, are generally slimmer, and live longer than their meat eating friends.
