Recipe Of The Week-Stir Fried Noodles and Peppers

Serves 6

1/2 Package (4 ounces) of alimentary paste noodles or rice noodles

2 tbsp. of vegetable oil

4 cloves garlic, chopped

3 cups 1/2 inch tofu slices, fried

1 cup red bell pepper, thinly sliced

1 cup yellow bell pepper, thinly sliced

1 cup green bell pepper, thinly sliced

1 cup white onion, thinly sliced

1 cup bamboo shoots, thinly sliced

1 1/2 tbsp. salt

1 1/2 tbsp. soy sauce

1 1/2 tsp. white ground pepper

1 1/2 tsp. sugar

1/2 cup scallions, thinly sliced

1 tsp. fresh lime juice

1. In a large pot of boiling water, cook noodles as directed.

Rinse noodles in cold water, drain and set aside

2. In a large frying pan over high heat, heat oil. Add garlic and cook until golden brown.

Add tofu, red, yellow and green peppers, onion, bamboo, salt, soy sauce, white pepper and sugar into pan.

Cook for 7-10 minutes, do not overcook vegetables.

3. In a large bowl combine vegetables and noodles. Add scallions and lime juice, mix together & serve!
